New Delhi: In preparation for the upcoming G20 summit, which is set to bring world leaders to India’s capital, the Taj Hotel in New Delhi has taken a unique culinary approach by preparing special dishes centered around grains. The hotel’s executive chef, in collaboration with a dedicated team of more than 120 culinary experts, is meticulously creating a menu that features a diverse array of Indian and international dishes, all highlighting the use of pure and small grains.
The Taj Hotel’s culinary team is geared to cater to over 500 attendees, ensuring that world leaders and delegates experience the vibrant flavours of India’s diverse cuisine. The menu will not only feature Indian delicacies but also offer a range of international dishes to accommodate the varied preferences of the participants.
Millet, known for its nutritional value and sustainability, takes centre stage in the preparations. A variety of millet types, including Foxtail Millet, Ragi (Finger Millet), Pearl Millet, Sorghum Millet, Little Millet, Kodo Millet, Proso Millet, and Barnyard Millet, will be featured in dishes prepared for the participants. These small grains are cultivated throughout India, with specific types like bajra and maize flourishing in the desert regions of Rajasthan and Gujarat, while maize is primarily grown in Maharashtra, Andhra Pradesh, Telangana, and Kerala. Ragi remains a staple crop in Tamil Nadu and Gujarat.
The menu for the G20 summit not only highlights India’s rich culinary traditions but also emphasizes its commitment to sustainability and healthy eating, aligning with the objectives of the International Year of Millet.
The G20 summit, scheduled to take place in New Delhi from September 9th to 10th, will see leaders from across the globe converging to discuss critical global issues. To commemorate the United Nations’ declaration of 2023 as the International Year of Millet, the culinary team at Taj Hotel has been tasked with incorporating millet prominently into the menu for the world leaders.
